Impala LT 3.5L Flex

Engine Hot - Turn A/C Off... This is the message that I get. When this happens, my temp gauge goes to full cold. This is a conflict. Hot engine, cold gauge. I am told that to fix this one must replace the thermostat. I first replaced the sensor, no help. Then the mechanic said he thought there might be bare wires grounding out. Spent $100 for wire work, no help. Was told that maybe fluid was low and creating an air pocket around the sensor, I added fluid, no help. Now, I am told that even though the engine is NOT hot, that if the thermostat is replaced, it will fix the problem guarnteed! Have not tried this yet. A note: I have 350,000 miles on this '09 and have never done a service on the coolant system.
